Dark chocolate and fresh ground peanut butter are two of my very favorite foods in the whole world, so what could be better than putting them together?! (Answer: close to nothing 😉 ).

My sweet cousin is getting married in a few weeks (how did she grow up so fast?!), so this past Sunday we hosted her bridal shower at our house. Mom put me on dessert duty so obviously I had to whip up one of my favorite (and super healthy!) treats: 2 ingredient dark chocolate peanut butter cups. Yup. You heard me right. Two ingredients. All you need is dark chocolate chips (or substitute with Lily’s stevia chips to make this a completely sugar free dessert!) and peanut butter. These guilt-free treats are full of antioxidants, protein and healthy fats.

These peanut butter cups are seriously delicious and were a huge hit at the bridal shower. Why buy peanut butter cups that have a huge list of strange ingredients when you can make them as easy as 1, 2, 3 at home AND feel good about eating them?

Many processed foods include so many unnecessary ingredients that can be easily nixed if they’re made at home. And many of these foods CAN be made at home (and pretty easily too)! I think it’s an amazing feeling being able to know exactly what’s in my food.

I try not to buy much processed food at all, but a rule of thumb I like to have for myself is if I don’t know the ingredients in the food I’m buying- I look up the ingredients and see what I’m putting in my body. This is especially important for people who are dairy free, as a lot of companies put in thickeners like carrageenan into their products (under many different names), which can cause inflammation. I think being a knowledgeable eater is a really empowering thing. Companies try to sneak all sorts of strange things into the foods we eat, which can effect our health negatively.

With that being said, there’s no need to get obsessed, and there’s no need to religiously read ingredient lists, but just trying to be a little more knowledgeable, or trying to make more foods at home, can really help create a healthy lifestyle. 🙂

2 Ingredient Dark Chocolate Peanut Butter Cups

A perfect sweet treat that you can feel GOOD about eating!

1 bar of dark chocolate (85-95%)
peanut butter

  1. Prepare cupcake tins with paper lining (use mini cupcake tins for smaller cups).

  2. Melt half of the chocolate bar on the stove in a pot until completely creamy.

  3. Pour the melted chocolate into the paper linings so that it only covers the bottom of each cup by a little bit.

  4. Put in the freezer for 20 minutes or more (or simply until the bottom layer is frozen hard).

  5. Take out out of the freezer and place a small dollop of peanut butter in each one.

  6. Melt the rest of the chocolate and pour over the peanut butter until each lining is filled.

  7. Optional: Add toppings like sea salt, shaved coconut, mint leaves or cinnamon.

  8. Freeze until completely hardened.
