Even with the weather turning colder, I can’t give up my smoothie bowls. I’ve still been making my classic chocolate smoothie bowl on repeat, but I knew I had to make an even more festive version for fall. This apple pie smoothie bowl is the perfect way for me to celebrate the season while still holding onto my beloved smoothie bowls.

Lately a big, thick smoothie bowl (especially this apple pie smoothie bowl) in the morning has been my favorite kind of comfort food. And I’m sure some people would laugh if I told them that a smoothie was comfort food to me, but I think comfort food is SO different for everyone. Comfort food is the food that makes you feel good, that’s comforting, that always makes you happy.

So comfort food doesn’t have to be unhealthy, which is typically what comes to mind when someone says “comfort food.” If your comfort food isn’t super nourishing – that’s okay! More than okay. Because comfort food is different for everyone. Just because a smoothie bowl is comforting to me, doesn’t mean it is for someone else.

And that’s the thing about food and “diets” all-together. There is no one right way to eat. No one right way to nourish your body. No one right way to eat healthy.

Food is so, so individual because all of our healthy journeys are so, so individual. Health is not one size fits all, so why should we think food is? Just because I can’t eat many raw vegetables due to my autoimmune disease, doesn’t mean raw veggies aren’t healthy (duh). They’re just not healthy for ME and my needs.

This is something I really wish people understood more often. You need to figure out what healthy means to YOU. It doesn’t matter what healthy means to all of the people you follow on Instagram or your friends or your family. You have to find what works for your body.

And for my body, this apple pie smoothie bowl works like a charm every single time. It’s paleo, gluten free, dairy free, refined sugar free AND Specific Carbohydrate Dietfriendly! It can also be made vegan if you use a plant-based protein powder (or omit all-together). I always use Vital Proteins collagen in my bowls! It’s a great option for those of us with gut-health issues.

Apple Pie Smoothie Bowl (Paleo + Vegan + GF + SCD Friendly)

This paleo cinnamon apple pie smoothie bowl is a perfect healthy breakfast option to celebrate the season! Made with REAL ingredients, it's sure to fuel your day.

Ingredients

Sautéed apples

  • 3/4 cup apple chunks

  • 1 tsp coconut oil

  • 2 tsp cinnamon

Smoothie

  • 3/4 cup sautéed apple chunks - frozen

  • 1/2 frozen banana

  • 1 cup frozen cauliflower rice any frozen vegetable will work!

  • 2 tsp cinnamon

  • 2 Tbsp almond butter

  • 1/2 cup almond milk

  • 2 Tbsp coconut flour

  • 1 scoop coconut vanilla Vital Proteins collagen you can use any protein powder of your choice or omit all-together!

  • optional toppings: paleo granola, pumpkin seeds, chopped nuts, etc.

Instructions

  1. Start my sautéing your apple chunks in a pan with the coconut oil and cinnamon. Sauté until soft and starting to brown.

  2. Transfer to a container and freeze for 2-3 hours or until the chunks are solid.

  3. Once the apple is frozen, place all ingredients in the blender and blend until smooth.

  4. Top with your favorite toppings and ENJOY!
