CLASSIC PALEO BANANA BREAD
There’s just something about banana bread that is so, so comforting. Biting into a thick, still-warm-from-the-oven slice of banana bread transports me back to my childhood when my mom would have a snack and tea waiting for me after school and we’d sit and recap the entire day (never leaving out any tiny detail or bit of boy drama). Times have changed and sadly I can’t recap every day of college with her (but I text her so much it kind of seems like I still get to LOL), but my love for cozy snacks like this, paired with a cup of tea, has stayed the same. But now my cozy snacks include this paleo banana bread and it’s even BETTER than my childhood snacks.
If you haven’t noticed from my Instagram, my mom is my best friend in the entire world and I feel incredibly lucky because of that. This past week she drove me back down to school and we had such a fun couple of girls days. We made a Whole Foods pit stop, watched cheesy rom coms, went out to my favorite restaurant in town, read and sipped on tea and talked each other’s ears off. And, of course, munched on a few slices of this paleo banana bread.
You’d think by senior year it’d get easier not harder to say goodbye, but boy was it hard to have her leave. I think freshman year college was so new and shiny that I didn’t have time to miss home. Now, with the impending REAL adult life fast approaching, school isn’t as new and shiny. *Enter homesickness.*
Because of this I knew I needed to whip up something cozy, comforting and classic. Because who doesn’t love a good slice of paleo banana bread? No fancy adaptogens, superfoods or collagen in this recipe. Just simple, REAL ingredients to comfort your soul AND fuel your body. Plus, it’s SCD-friendly, paleo, dairy free and refined sugar free. Does it get better than that? I don’t think so!
Classic Paleo Banana Bread (Paleo + SCD-Friendly + Gluten Free + Dairy Free + Refined Sugar Free)
2 medium-sized ripe bananas
1 tsp pure vanilla extract
2 whole eggs
1/4 cup nut milk I typically use almond, but any type of nut milk will work!
1/4 cup coconut butter also called coconut manna, which can be found at any health-food store
2 tsp raw honey optional
1/2 cup coconut flour
2 tsp cinnamon
1/2 tsp baking soda
1/8 tsp salt
optional add-ins: walnuts, pecans or coconut flakes
Preheat your oven to 350 degrees F and prepare a standard sized bread pan by "greasing" it with coconut oil (or lining with parchment paper).
In a large bowl, mash your two bananas. Add your eggs, vanilla extract, nut milk and optional honey and stir well.
Melt your coconut butter on the stove and add to the other wet ingredients and stir.
In a separate bowl, mix the coconut flour, cinnamon, baking soda and salt.
Add your dry ingredients to your wet ingredients and mix. Add any optional add-ins.
Place in your bread pan and smooth the top.
Bake for 35-40 minutes
