MINI PALEO EVERYTHING "BAGELS"
I don’t normally crave things that I know make me sick. Dairy? Gluten? Soy? Refined-sugar-free filled thangs? I never crave them. Honestly the smell of them sometimes even makes me nauseous because I associate it all with feeling sick and with stomach pain.
But weirdly I’ve been craving an everything bagel something MEAN lately. Like one of those cravings where I practically have been dreaming about everything bagels (okay slight exaggeration, but you get my point).
I knew eating an actual everything bagel would be a death wish (if you’re new here - I realized I was gluten intolerant almost 5 years ago and haven’t had gluten since except for an accidental time in Europe and my stomach blew up and I looked like I was 8 months pregnant so YAY. It’s also just not great for my ulcerative colitis), but I’m also a firm believer in satisfying your cravings.
Cravings are our bodies giving us signals, so I think they should be listened to. Even if you choose not to indulge in them, they can be great indicators for ways your diet or life are off-balanced. For me, I think this craving showed me that I’m needing more savory and more salt (considering I don’t get much sodium in my diet because I rarely eat packaged snacky foods).
And although I believe in honoring your cravings, I also believe anyone can honor their cravings in a healthier way. So instead of ignoring my everything bagel craving I took matters into my own hands.
These mini bites were the perfect way for me to honor my craving without making myself sick. They may not be exactly like bagels or have the same mouth-feel, but they do the trick. :)
Mini Paleo Everything “Bagels” (paleo + gluten free + dairy free + refined sugar free + SCD friendly)
These mini paleo everything “bagels” are a fun savory snack or slice, toast and top with avocado for itty bitty avocado toast! Full of healthy fats and flavor, these little bites may be small but they’re far from boring.
1 1/2 cup almond flour
1/4. cup coconut flour
1/2 tsp garlic powder
2 Tbsp everything but the bagel seasoning (+ another 1 Tbsp for after mixing batter)
1/2 tsp salt
1 tsp baking soda
2 Tbsp water
1/2 cup olive oil
Preheat your oven to 350 degrees Fahrenheit and prepare your mini donut pan by greasing each donut form with oil (I did coconut oil for the greasing).
Combine the almond flour, salt, garlic powder, everything but the bagel seasoning and baking soda in a large bowl and mix well.
In a separate bowl, combine your eggs, olive oil and water. Mix until fully combined.
Combine your wet and dry ingredients and mix well.
Before placing batter in each donut form, sprinkle the remaining everything but the bagel seasoning into the bottom of each form so that the “bagels” come out with seasoning on top too.
Scoop a little bit of batter into each donut form.
Bake for 15 minutes.
