I can’t believe the day is FINALLY here!!! After months of creating specific carbohydrate diet friendly recipes, testing them (and retesting them), photographing them, editing photos and designing the pages of this ebook, it feels surreal that it has finally launched.

When I got diagnosed with Ulcerative Colitis (you can read more about this process on my original next steps post and my more current health update) in August 2017 I felt a little lost, but I knew wholeheartedly that I was going to take steps to naturally help my gut. One day after my diagnosis and I committed to trying the Specific Carbohydrate Diet.

Now, with that being said, I do NOT think Western medicine is evil. People ask me a lot, and yes I’m on a medication right now because I needed to get some of my more serious symptoms under control more quickly than diet would have. But I am hoping and praying that one day I may be able to rely on diet alone. For me, food is my biggest form of medicine, and knowing I am helping my body through doing the Specific Carbohydrate Diet not only helps me physically, but mentally. It helps me feel in control of the autoimmune disease that ultimately controls many parts of my life.

I remember the first couple of days of trying to navigate the Specific Carbohydrate Diet and let me tell you… it was hard. It was harder than hard. I cried in my bed to my parents, saddened by how “high-maintenance” I was, frustrated by my own body, confused on what the heck to eat.

But after buckling down, doing research and taking many trips to Whole Foods I realized that SCD could still be just as fun and delicious as I had been eating beforehand. I had always dealt with food intolerances, so the Specific Carbohydrate Diet was truly not that huge of a leap for me. And knowing that it could ultimately make a huge difference in the symptoms of my autoimmune disease and the overall not-so-fun stomach (and overall body) symptoms I had dealt with for years was enough to sell me on it.

And ya’ll… I truly feel so much better. I used to deal with nightly, almost debilitating, stomach pain and daily fatigue, brain fog and bloat and, although YES I still deal with those symptoms, it’s not every single day. And that’s a HUGE win in my book.

Although I’ve gotten a hang of eating in the best way to fuel my life with Ulcerative Colitis, I remember how hard those first few days and weeks were. What do I eat? Can I only eat meat and veggies? Can I never have dessert again?!

I remember searching for recipes online and being dismayed by the SCD options on the market. I was used to creative, fun sweet treats (I love both baking and cooking, but baking is definitely my favorite), so, being a recipe developer, I took matters into my own hands.

As I began creating more SCD-friendly recipes for the blog , I realized I had too many recipes ideas to just keep infiltrating the blog. And after taking a graphic design course over January, I knew the answer – an ebook. THIS ebook (AHHHH I still can’t believe it)!!!! And because nut butter is my LIFE, I knew I wanted to somehow incorporate it in a bigger way. Nut butter literally fuels my life ya’ll.

Creating this ebook combined all of biggest passions – health, wellness, recipe development AND design. As a mass communication major, I love the actual process of designing, writing and marketing for my blog just as much as I do the food. So, although I had to work my booty off the last three and a half months, every second was worth it. I am so proud of what I’ve created, not only because the recipes are all so drool-worthy (trust me, they were all taste-tested and approved by either my roomies or my parents!), but because I absolutely love the design and layout (and I hope you do too)!

I wanted to make eating on the Specific Carbohydrate Diet easier for others, as I understand that not everyone is able to create their own recipes. If I can make life with an autoimmune disease easier for even just ONE person with this ebook, I will be such a happy girl.

Food is so powerful and healing, but it should also be FUN.
