NUT FREE CARROT CAKE BLISS BALLS
I just made a fall recipe board on Pinterest, but here I am still making carrot cake recipes like it’s spring. ;) Honestly, I just love carrot cake too much t o ever let it go, no matter the season. Like bring on all the pumpkin and cinnamon apples, but please don’t take my carrot cake. Wait a second… should I make pumpkin carrot cake a thing!? ;)
I’ve been nut-free for about three or four weeks now (I’ve honestly lost count) and it’s crazy how my cravings have already shifted. The first few days were pretty difficult because I was craving peanut butter, almond butter and cashew butter like crazy. But I know how they make my stomach feel so I knew it wasn’t worth it.
I can now say that I haven’t craved any of them in weeks! With tigernut butter, pumpkin seed butter and sunflower seed butter to hold me over, I’m doing just fine. :)
I also love that it’s forced me to. switch up my daily eats. I was in a total almond butter rut, and I feel like I’m definitely getting more diverse nutrients now that I’m exploring other options.
Sunflower seed butter is a great source of Vitamin E, Vitamin B1 and magnesium.
Pumpkin seed butter is a great source of manganese, phosphorus, copper, zinc, and iron.
Tigernut butter (which are actually tiny root vegetables) is a great source of Vitamin E, iron, phosphorus, Vitamin C and magnesium.
And who doesn’t love a wide variety of nutrient in their diet!?

Nut Free Carrot Cake Bliss Balls (paleo + vegan + gluten free + Refined Sugar Free +nut free)
These nut free, vegan and paleo carrot cake bliss balls are the perfect healthy sweet treat to satisfy your cravings and nourish your gut!
1 cup coconut flakes
1/2 ripe medium banana
1/4 cup sunflower seed butter (if you are not nut-free, you can sub for any nut butter)
1/4 cup tigernut butter (again - you can sub other “butter”)
2 Tbsp water
1 cup shaved carrots
1 Tbsp cinnamon
1/2 cup coconut shavings for rolling
In a small food processor, combine your coconut flakes, 1/2 banana, sunflower seed butter (or desired substitute), water and cinnamon.
Blend until smooth.
Grate your carrots and put half in the food processor and blend again.
Fold the other 1/2 of the carrot shavings in to the “batter.”
Roll in to ball form and roll in the coconut shavings.
