I’ve been nut-free for about three or four weeks now (I’ve honestly lost count) and it’s crazy how my cravings have already shifted. The first few days were pretty difficult because I was craving peanut butter, almond butter and cashew butter like crazy. But I know how they make my stomach feel so I knew it wasn’t worth it.

I can now say that I haven’t craved any of them in weeks! With tigernut butter, pumpkin seed butter and sunflower seed butter to hold me over, I’m doing just fine. :)

I also love that it’s forced me to. switch up my daily eats. I was in a total almond butter rut, and I feel like I’m definitely getting more diverse nutrients now that I’m exploring other options.

Nut Free Carrot Cake Bliss Balls (paleo + vegan + gluten free + Refined Sugar Free +nut free)

These nut free, vegan and paleo carrot cake bliss balls are the perfect healthy sweet treat to satisfy your cravings and nourish your gut!

Ingredients

  • 1 cup coconut flakes

  • 1/2 ripe medium banana

  • 1/4 cup sunflower seed butter (if you are not nut-free, you can sub for any nut butter)

  • 1/4 cup tigernut butter (again - you can sub other “butter”)

  • 2 Tbsp water

  • 1 cup shaved carrots

  • 1 Tbsp cinnamon

  • 1/2 cup coconut shavings for rolling

Instructions

  1. In a small food processor, combine your coconut flakes, 1/2 banana, sunflower seed butter (or desired substitute), water and cinnamon.

  2. Blend until smooth.

  3. Grate your carrots and put half in the food processor and blend again.

  4. Fold the other 1/2 of the carrot shavings in to the “batter.”

  5. Roll in to ball form and roll in the coconut shavings.

  6. Place in the freezer for 1 hour and…
