I’ve been a pesto lover since wayyyy back. Like WAY back. I remember absolutely LOVING it on cheese paninis and pasta when I was little (oh how times have changed) and it always completed the fun snacky boards my family would make for special occasions. I started experimenting with making my own pesto recipes a few years ago (you might remember a couple that were on the blog, but I’ve ditched those in lieu of this new and improved version). I even went through a phase and fell into that “frozen peas in pesto trap” because I thought it was healthy to lower the fat of pesto. HAHAHAHAHAHAHA (yes that’s me laughing at myself). Ya girl definitely doesn’t fear fat at ALL anymore, especially in foods that traditionally are higher in fat, because why mess with something that’s a classic? Well, I guess that’s ironic because I definitely switched up the classic pesto recipe to create this paleo avocado cashew pesto, but I think it should become the new classic. But I might be a little biased

This pesto is a total game changer – it’s perfect on toast, sandwiches, eggs scrambles, with veggies and especially with Bare Snacks new sea salt beet and carrot chips. Veggie chips are my absolute weakness. I think it has to do with the fact that I can’t eat many chippy, crunchy snacks due to my gut issues and food intolerances, so when I find ones I can eat, I get a little obsessed.  I especially love these because the chips are smaller and thinner and have the classic chip crunch, opposed to so many beet chips that are super thick (just call me a beet chip connoisseur). And ya’ll already know how obsessed I am with carrots so when I heard they came out with carrot chips it was like a dream come true. And yes, I did eat the bag way too fast.

And the best part? The chips only have TWO ingredients (beets and salt and then carrots and salt). Like can I get an AMEN?! So while I don’t count calories (EVER), I do count ingredients and these past the test right away. Real food, real ingredients, real fricken good. Check check and CHECK. I love snacks that taste good AND make me feel good.

It can definitely be hard to find creative snack options for myself and I find I get in food ruts pretty easily with how restricted my diet has to me. I don’t mind my diet at all and I love the foods I get to nourish my body with, but sometimes it’s definitely difficult to have to think through everything I put in my body. Some days I wish I could just grab anything and dash like everyone else, but I also know that will never happen and that’s okay. Because although I have to plan ahead for every meal and snack, I love forcing myself to be creative in the kitchen and find the best foods to nourish my body.

But sometimes I just want something easy and convenient, so I’m SO dang happy about this new chip find. Especially because I typically keep my pesto stocked in the fridge (it’s a meal prep must). Grab a little Tupperware of that to go, plus a bag of veggie chips and I’m SET.

Besides this paleo avocado cashew pesto and veggie chips, I also love having hard boiled eggs, good quality lunchmeat turkey and roasted veggies on hand for easy snacking, as well as at least one of my baked goods (my go-to? making my banana bread into muffins for the easiest grab and go snack!).

Paleo Cashew Avocado Pesto (Paleo + Specific Carbohydrate Diet Friendly + Dairy Free + Gluten Free)

This paleo avocado cashew pesto makes for the perfect dip for chips, veggies or simply a spoon! Plus it's only made with SEVEN ingredients and is specific carbohydrate diet friendly, dairy free and gluten free!

Ingredients

3 oz fresh basil

2/3 cup roasted cashews

1/2 cup avocado I suggest using an avocado on the riper side!

2 garlic cloves

1 Tbsp lemon juice

1/4 tsp salt

1/8 tsp black pepper

Instructions

  1. Make sure to start by washing your basil and cutting your cloves of garlic into a few smaller pieces.

  2. Place all of your ingredients in a food processor and blend on high until no large chunks of nuts are still there.

  3. Put in a bowl, dip and ENJOY!
