PALEO CAULIFLOWER RICE OATMEAL
This cauliflower rice oatmeal has been on REPEAT lately (if you follow me on Instagram, you know how true this is). I seriously can’t stop making this cozy cauliflower rice oatmeal bowl morning after morning. I tell myself to be more creative, but 9 times out of 10 I find myself reaching for the cauliflower rice. It’s just that good.
I think there is just something so comforting about a cozy bowl of “oatmeal” in the morning, especially after a hard workout or chilly run. That’s the one thing I missed most when starting SCD – my cozy morning oatmeal. So when I made this cauliflower rice oatmeal my heart was SO happy.
Oatmeal never left me feeling very good (brain fog always rolled in and my stomach always felt uneasy), but I just kept eating it because I loved the ritual of cozying up with a steaming hot bowl of protein oats, adorned with all of my favorite toppings (because DUH that’s the best part), after a workout. That calm limbo between the morning rush of my workout and the rush of class, work and meetings always feels most complete with a nourishing, yummy breakfast, especially in the form of oatmeal.
I went about 3.5 months on SCD without attempting any type of paleo oatmeal because I didn’t think it would be able to do real oatmeal justice. But one day I was craving it SO badly, so I whipped up my original SCD-friendly coffee “oats” and I was hooked.
I decided I wanted to experiment with cauliflower rice to lighten it a bit and give it more volume. Mainly because such a small bowl of oatmeal wasn’t big enough to fit all of the toppings I wanted to. PLUS, I love sneaking veggies into breakfast.
This may not taste exactly like the oatmeal I used to eat, but it tastes SO good in its own unique way. But the best part? It leaves me feeling amazing, energized and ready to take on the day. No more brain fog for this girl!

Paleo Cauliflower Rice "Oatmeal" (SCD-Friendly + Grain Free + Gluten Free + Dairy Free + Refined Sugar Free)
This paleo version of cozy "oatmeal" is sure to hit the spot. It's fully of veggies, protein and healthy fats to fuel your morning!
1 1/2 cup frozen cauliflower rice (you can also make your own!)
2 Tbsp coconut flour
2 Tbsp coconut shavings
1/4 cup finely chopped cashews
1 scoop coconut vanilla Vital Proteins collagen (this is optional! Feel free to use any type of vanilla protein powder you would like)
1 tsp honey (optional depending on sweetness preference)
1 tsp pure vanilla extract
coconut flakes, nut butter, coconut butter and bananas(optional toppings)
In a small pot or pan, place your frozen cauliflower rice with a little bit of water and put a lid on top. Cook on low for 5 minutes or until the cauliflower rice is very soft and fully cooked. If you are using your own, homemade cauliflower rice, steam until fully cooked.
Drain the excess water out of your pot or pan and pour the cauliflower rice in a bowl.
Mix in the coconut flour, coconut shavings, protein powder of choice and finely chopped cashews. If you don't have coconut shavings, you can use coconut flakes and simply chop or grind/blend them into smaller pieces.
Next, mix in the vanilla extract and honey. Mix well, adding a little water or almond milk if needed.
Next, top with banana, coconut flakes, nut butter or coconut butter (the options are endless!!)
