PALEO LEMON COOKIE DOUGH BITES
I’m itching for summer ya’ll (if you couldn’t tell by my continual lemon recipes). If you’re anything like me you want snacks in the summer that feel refreshing but still fill you up and give you energy. I’ve been adding lemon to so many recipes lately because I think it gives it that perfect zest and light taste that summer treats need!
I love these because they’re full of healthy fats, vitamin C from the lemon and even some protein from the almond flour and macadamia nuts.
And just because it’s almost summer and I’m craving refreshing treats, doesn’t mean I don’t still want something satisfying. It’s definitely “diet talk season” and I am SO NOT HERE FOR IT.
Sure, it’s almost summer. Sure, I’ll be in a swimsuit on the beaches of Kauai in less than three weeks. Sure, I’ll be busting out the shorts and sundresses. But that doesn’t mean I’m going to be changing how I eat.
My biggest focus and goal is creating a healthy lifestyle that is sustainable all year round. Not a lifestyle that has to “ramp up” for spring break or summer. Not a lifestyle I want a vacation from. Not a lifestyle that burns me out. Not a lifestyle I can “keep falling off” of.
Just a lifestyle that supports my physical and mental health, makes me happy and keeps me feeling GOOD. I continually hear women talking about how they’ve “fallen off the wagon,” and here’s what I have to say to that - it’s not you, it’s the dang wagon.
There is no wagon. It’s just life. It ebbs. It flows. Sometimes you’re more motivated. Sometimes you’re less motivated. Sometimes you crave salads. Sometimes you indulge in pizza and margaritas.
But it’s LIFE. When you let go of the mindset that you need to keep “starting over” it all seems more doable doesn’t it? There is no start and stop, there is just life.
And it’s up to you to create one that fosters a healthy relationship with your body AND mind. And that starts with still supporting your body with healthy, satisfying foods, even in the summer. :)
So while many women may be trying to get “swimsuit ready” (whatever tf that means), I’ll be over here tuning out diet-talk and enjoying as many of these delicious bites as I want.
Life is too short for crash diets.

Paleo Lemon Cookie Dough Bites (paleo + vegan+ gluten free + SCD friendly + Refined Sugar Free)
Because you should. be able to have your cookie dough and eat it too!
1 2/3 cups almond flour
3 Tbsp coconut flour
3 Tbsp honey
3 Tbsp melted coconut oil
1 1/2 tsp pure vanilla extract
1/4 cup lemon juice (about 1/2-2/3 lemon squeezed)
1/4 cup chopped macadamia nuts
Mix the almond flour and coconut flour together in a large bowl.
On the stove, melt your coconut oil.
Stir in the honey while the oil is still warm.
Pour into a separate bowl and mix in the vanilla extract and lemon juice.
Combine the dry and wet ingredients and mix well.
