Bliss balls, energy balls, energy bites – whatever you want to call them – they are my JAM. They’re easy to make, super versatile and the perfect, healthy, on-the-go snack! And these strawberries and cream version? HEAVENLY.

I have quite the (healthy) sweet tooth when it comes to my snacks of choice (my paleo banana bread and coconutty collagen protein bites are two of my go-to’s), so these little strawberries and cream guys are perfect. But with only a touch of honey, they aren’t too sweet and the slight tartness from the strawberries makes sure of this. Plus, the healthy fats from cashews and coconut keep your blood sugar stable. I also use mainly soaked cashews in this recipe because they’re easier to digest and you know I’m ALL about that gut health!

And if you know me, you know I love to snack. Three square meals a day just doesn’t cut it for me. Of course, I eat three proper meals a day, but I always need little bites and snacks between them to tide me over. Ever since I was little, my little stomach couldn’t handle very big miles, so I was always snacking. And guess what? There’s NOTHING wrong with that!! I used to feel pressure to eat bigger meals and snack less because so many people say that’s “healthier,” but I realized that truly doesn’t work for my body.

For me, snacking works best. For me, eating natural sugar doesn’t bother me at all.For me, eating a lil something after dinner is something that always happens. For me, eating before I workout is non-negotiable. For me, eating sweet breakfasts satisfy me the most.

For me, health is something different than what it is for you!

But the one thing I think we can ALL agree on is that these lil balls of yumminess are delicious.

Paleo Strawberries and Cream Cashew Crunch Bliss Balls (Paleo + SCD-Friendly + Gluten Free + Dairy Free + Refined Sugar Free)

These strawberries and cream cashew crunch (try saying that 10 times fast!!) bliss balls make healthy snacking on-the-go easy and delicious!

Ingredients

Balls

  • 2 cups cashews soaked for 2-3 hours

  • 1/3 cup cashews not-soaked, chopped

  • 1/2 cup unsweetened coconut flakes

  • 1 cup freeze dried strawberries

  • 3 Tbsp raw honey

  • 1/4 cup coconut oil melted

Drizzle (optional)

  • 1/4 cup cashew butter

  • 2 Tbsp honey

  • 3 Tbsp coconut oil

Instructions

  1. Start by soaking the first 2 cups of cashews in bowl full of filtered water. Make sure the water covers all of the cashews. As discussed above this helps make the nuts easier to digest. If you don't have time to soak your cashews, but still want to make this recipe, non-soaked cashews work as well!

  2. Once they are done soaking, place them in a food processor, along with the coconut flakes, freeze-dried strawberries, honey and melted coconut oil. Blend until smooth (this may take awhile!).

  3. Take the mixture out of the food processor and, by hand, mix in the 1/3 cup of un-soaked, chopped cashews. This adds that yummy crunch!

  4. Roll into balls with about a 1 inch diameter. Freeze for about 15-20 minutes or until hard to the touch.

  5. While the balls are freezing, prepare the drizzle.

  6. Either on the stove or in a microwave, melt the cashew butter, honey and coconut oil together. Mix well.

  7. Take the balls out of the freezer and drizzle with the cashew butter mixture. I find it easiest to drizzle by using the tip of a sharp knife!

  8. Freeze again for about 5-10 minutes and enjoy! Store in the fridge for up to one week or in the freezer for as long as you'd like!
