Raise your hand if you’re doing Whole30 this month!? *not raising my hand because I’m not* BUT I will still be enjoying these Whole30-approved “cheesy” tahini cauliflower bites despite that!! If you are doing Whole30, these are the perfect snack, appetizer or side-dish option. Or if you’re just like me and love healthy, but delicious food – you’ll love ’em too!

I’m notorious for practically eating my bodyweight in vegetables every day and people always ask me “how!?” I’m never sure if they’re asking “how do you fit it all inside of you!?” or “how did you learn to love veggies so much!?” But either way, I don’t 100% know the answer.

Okay, that’s a lie – I kind of know how I learned to love veggies so much – I take them up a notch by cooking them in new ways! Trust me, I love plain, raw veggies too (even though they don’t love me too much because of my autoimmune disease), but roasting them, steaming them and dipping them makes it so much more fun.

By trying veggies in new ways, like making these “cheesy” tahini cauliflower bites, is a great way to sneak in more veggies without feeling like a rabbit.

And I know, I know, a lot of people think raw vegetables are more nutritious, but cooking vegetables can actually unlock higher quantities of nutrients in some cases. This article is helpful when it comes to knowing which techniques help or hinder nutrients in your veggies. As it says, roasting can be a hit or miss, but I believe just eating more veggies, despite if they’re raw, roasted, baked or broiled, is better than not eating them at all!

This has become one of my favorite snacks because it’s packed with vitamin C from the cauliflower, healthy fats, magnesium, phosphorus, iron and calcium from tahini and vitamin B from nutritional yeast. This is an especially good option for any of you who are vegan or vegetarian, as B vitamins are most easily found in animal products!

So next time you think “veggies are boring” make this “cheesy” tahini cauliflower and I promise you’ll change your mind! Side note, I always use Soom Foods tahini because it’s just that good (not sponsored, just in love with it!). You can use code “blondegoneclean” for 10% off your order!

Roasted "Cheesy" Tahini Cauliflower Bites

These "cheesy" tahini cauliflower bites are the perfect healthy appetizer, snack or side dish!

1 small head of cauliflower

1/3 cup tahini

1/3 cup warm water

1/3 cup nutritional yeast

2 1/2 tsp salt

  1. Preheat your oven to 400 degrees Fahrenheit. Prepare a baking sheet by lining it with parchment paper or coating with coconut oil or avocado oil.

  2. Chop your cauliflower into smaller florets and place in a large bowl, set aside.

  3. In a separate bowl, mix your tahini and warm water until fully combined. Warm water simply helps it mix more easily!

  4. Add your nutritional yeast and salt and stir until combined.

  5. Pour mixture over your cauliflower and use a large spoon to keep stirring and mixing the cauliflower until all pieces are covered.

  6. Pour onto your prepared baking sheet and sprinkle with some extra nutritional yeast and salt (and any leftover mixture in the bowl).

  7. Bake for 25-30 minutes, let cool and enjoy! Dip in more tahini for extra deliciousness.
