SOFT & FLUFFY PALEO SNICKERDOODLE COOKIES

I have been on a mission to create a paleo and Specific Carbohydrate Diet friendly snickerdoodle cookie forever now, but kept getting scared off because I knew I couldn’t use cream of tartar. And what’s a snickerdoodle without the cream of tartar? Well, if you didn’t know the cream of tartar is what gives snickerdoodle cookies that almost sour bite to them that makes them just different enough from plain-old sugar cookies. Without the cream of tartar, it’s essentially a sugar cookie rolled in cinnamon (also who knew snickerdoodles don’t actually have any cinnamon IN them!? Yup just ON them). But I knew making paleo snickerdoodle cookies would have to happen one day and I’m so excited that day finally came.
I knew I needed something else to take over the cream of tartar’s function of creating a tiny bit of a “sourness” in this recipe – enter apple cider vinegar. I was nervous to experiment with this but let me tell you… it worked PERFECTLY. These paleo snickerdoodle cookies taste like the real deal ya’ll (even my parents think so)!!

These paleo snickerdoodle cookies are the perfect healthy treat to bring to any upcoming New Year’s parties. Or, just keep them all for yourself… trust me. You probably won’t want to share.
Soft & Fluffy Paleo Snickerdoodle Cookies
These paleo snickerdoodle cookies are soft, fluffy and taste JUST like the real deal!
2 cups almond flour
2 Tbsp Wild Harvest organic coconut flour
1/4 tsp salt
1/4 tsp baking soda
2 tsp apple cider vinegar
1/4 cup melted coconut oil
3 Tbsp Wild Harvest honey
1 tsp pure vanilla extract
2 tsp Wild Harvest organic cinnamon
1/2 tsp Wild Harvest organic nutmeg
Preheat your oven to 350 degrees Fahrenheit and prepare a baking sheet with coconut oil or parchment paper.
In a large bowl, mix the almond flour, coconut flour, salt and baking soda and stir until combined.
In a separate bowl, mix the apple cider vinegar, melted coconut oil, egg, honey and vanilla extract and once again stir until combined.
Slowly add the dry ingredients to the wet ingredients, mixing as you go.
Place batter in the fridge for 20 minutes.
As the batter cools, mix the cinnamon and nutmeg together in a bowl large enough to roll the cookies in.
Once the batter is done cooling, create about 1-inch by 1-inch balls of dough and flatten slightly with your hands. Then, roll the dough in the cinnamon & nutmeg mixture, coating all sides. Place on cookie sheet and repeat.
Bake for 12-15 minutes, let cool and ENJOY!
Store in an airtight container in the fridge for up to one week or in the freezer for as long as you wish.
