PALEO STRAWBERRY COCONUT CASHEW BUTTER CUPS
I can’t believe January is already over and February is in full swing!! This year is already flying by… but you know what they say – time flies when you’re having fun! Especially fun in the kitchen. And these cashew butter cups are the most fun!!!
As Valentine’s Day approaches I like to use it as a reminder to show myself a little extra self love. I see and hear so many girls this time of year cracking joke after joke about their “boyfriend-less” Valentine’s Day and I always shake my head… Why do we need a man in our life to fully enjoy a day dedicated to love? Sure, candle dinner dates, fresh roses and boxes of chocolate are great, but who says we can’t still enjoy those things without someone else giving them to us? Buy yourself those flowers, chocolates and fancy dinners ladies!! And make yourself some cashew butter cups while you’re at it.
I used to always wish I had someone special to celebrate Valentine’s Day with, but the last couple of years I’ve realized how being single truly has taught me to just be confident and comfortable being in my own company and finding worth from within, rather than from others. It’s also taught me that being selfish, well, isn’t always that selfish. It’s OKAY to put yourself first. Actually, it’s MORE than okay! Whether that means saying no to a social outing because you would rather lay in a hot bath and read or blocking out time from your day to just spend quality time doing what you love.

These coconut cashew butter cups are quick and easy to make (and disappear even quicker) and are full of healthy fats. They’re perfect when you want something sweet without getting the inevitable sugar crash.
Strawberry Coconut Butter Cashew Cups (Paleo + SCD-Friendly + Dairy Free + Refined Sugar Free)
An easy, healthy, delicious paleo, vegan and SCD-friendly treat to whip up and remind yourself that you LOVE yourself!!
1/2 cup coconut butter
1/2 cup cashew butter
1/3 cup freeze dried strawberries
1 Tbsp raw honey optional
Start by preparing mini muffin tins with mini muffin liners.
Melt your coconut butter (either on the stove or in the microwave).
Pour a little bit of the coconut butter in the bottom of the muffin tins, filling them about 1/3rd of the way up.
Place in the freezer for about 8-10 minutes (or until the coconut butter is solid).
Either drizzle or spread a layer of cashew butter (depending on the consistency of your cashew butter) on top of the coconut butter. If your cashew butter is thicker (like mine was), make sure you spread it all the way into the edges of the muffin liner.
If you want them a little sweeter, drizzle a little honey on top of the cashew butter.
Drizzle more coconut butter on top until the liners are full.
Crush the freeze dried strawberries and sprinkle on top.
Freeze for 10 more minutes and ENJOY! Store in an airtight container in the fridge.
