As Valentine’s Day approaches I like to use it as a reminder to show myself a little extra self love. They’re perfect when you want something sweet without getting the inevitable sugar crash.

Strawberry Coconut Butter Cashew Cups (Paleo + SCD-Friendly + Dairy Free + Refined Sugar Free)

An easy, healthy, delicious paleo, vegan and SCD-friendly treat to whip up and remind yourself that you LOVE yourself!!

Ingredients

1/2 cup coconut butter

1/2 cup cashew butter

1/3 cup freeze dried strawberries

1 Tbsp raw honey optional

Instructions

  1. Start by preparing mini muffin tins with mini muffin liners.

  2. Melt your coconut butter (either on the stove or in the microwave).

  3. Pour a little bit of the coconut butter in the bottom of the muffin tins, filling them about 1/3rd of the way up.

  4. Place in the freezer for about 8-10 minutes (or until the coconut butter is solid).

  5. Either drizzle or spread a layer of cashew butter (depending on the consistency of your cashew butter) on top of the coconut butter. If your cashew butter is thicker (like mine was), make sure you spread it all the way into the edges of the muffin liner.

  6. If you want them a little sweeter, drizzle a little honey on top of the cashew butter.

  7. Drizzle more coconut butter on top until the liners are full.

  8. Crush the freeze dried strawberries and sprinkle on top.

  9. Freeze for 10 more minutes and ENJOY! Store in an airtight container in the fridge.
