Happy (almost) 4th of July!! To be honest, I’ve never been a huge 4th of July celebrator (crazy right!?), but I do love whipping up fun, festive treats no matter the holiday. Holidays for me are like a little boost of creativity and inspiration I didn’t even know I needed in the kitchen!

And as much as I’m really not celebrating in any special way this year (just a low-key ME day planned, with some personal training studying sprinkled in of course), I will be enjoying a slice (or two) of this “ice cream” cake and enjoying everyyy single bite.

I know fruit-fear is a huge thing in the health and wellness community and it’s a trap I even fell into for quite awhile. I thought fruit was “bad” because I saw so many Instagrammers and foodie bloggers talking about the detriments of eating too much fruit. But after cutting out fruit almost completely for awhile, I realized how SILLY that was!!

Granted, my body and stomach doesn’t feel awesome at all if I have a ton of fruit at once (that’s why I always make my smoothies about 1/2 fruit and 1/2 veggie) and certain fruits like mango, watermelon and dried fruits always give me brain fog and a stomachache, but other than that I’m golden. My morning banana? Makes me feel BOMB. Berries? Love them to death. Frozen grapes? My own personal weakness.

And fruit offers so many health benefits ya’ll!!! First off, it’s metabolized differently in your body. Fructose is broken down in the liver and doesn’t require an insulin response. PLUS since fruit has fiber, it slows down the digestion of fructose, therefore you don’t get a crazy sugar spike and crash like you would from a pastry or sugary coffee drink. PLUS fruit has mineral and vitamins and nutrients (oh my!!). Sounds pretty good to me.

Bottom line? Don’t fear fruit simply because fruit doesn’t work for other people. Some people truly do have a fructose intolerance and some people truly just feel like sh*t after eating fruit and some people may avoid it due to candida overgrowth, etc. so NO JUDGEMENT if you don’t eat fruit! But no judgement if you do either.

Triple Layer Banana "Ice Cream" Cake (Paleo + SCD Friendly + Gluten Free + Dairy Free + Refined Sugar Free)

This triple layer banana "ice cream" cake is the perfect way to get in the 4th of July mood or to simply cool off on a hot summer day! Made with three delicious layers and a yummy crust, it's sure to make your taste buds dance. Top with fresh fruit and coconut whipped cream and you have yourself a dessert to remember!

Ingredients

Crust

  • 1/2 cup unsweetened coconut flakes

  • 1/2 cup roasted cashews

  • 1/4 cup coconut flour

  • 1/8 tsp salt

  • 4 soaked medjool dates (large)

  • 1 tsp pure vanilla extract

  • 3 Tbsp coconut oil

Layer One - Red

  • 1 1/2 cup chopped frozen banana pieces

  • 1 cup chopped frozen strawberry pieces

  • 2 Tbsp coconut cream I always look or a canned coconut cream that has no added gums or sugar! If you can't find a good option, you can substitute with coconut butter.

Layer Two - White

  • 2 cups chopped frozen banana pieces

  • 1/4 cup coconut cream

  • 1/2 cup unsweetened coconut flakes

  • 2 Tbsp unsweetened coconut flakes for sprinkling

Layer Three - Blue

  • 1 1/2 cup chopped frozen banana pieces

  • 1/2 cup frozen blueberries

  • 2 Tbsp coconut cream

Instructions

  1. Make sure you use a 7 inch, non-stick spring form pan! This makes it easy to take the cake out.

  2. Before starting, "flash soak" your dates. Place them in a bowl and cover with boiling water for about 3 minutes (or until they feel soft). Be careful and make sure not to soak them for very long or all of the sweetness/flavor will seep out into the water!

  3. Once your dates are soaked, place all of the ingredients for the crust in a food processor (make sure the coconut oil is melted) and blend until no large chunks of nuts or coconut flakes are present.

  4. Press the mixture into the bottom of your spring form pan, making sure it's evenly distributed. Place in the freezer.

  5. While the crust is freezing, prepare the first layer. Place all of the ingredients for layer one (red) in a food processor and blend until smooth and no large chunks of fruit are present.

  6. Spread evenly on top of the crust, making sure there will still be enough room or layers two and three, and place back in the freezer. Let freeze for about 10-15 minutes.

  7. After the first layer is done freezing, prepare the second layer by placing the ingredients into the food processor again (make sure you've rinse it out between layers so the colors don't blend!) and blend until smooth. Place on top of the first layer and spread evenly. Sprinkle the extra two tablespoons of coconut flakes on top and freeze for 10-15 minutes once again.

  8. Once again, rinse your food processor and place all of the ingredients for layer three in and blend until smooth. Place on top of the second layer and spread evenly.

  9. Let freeze for 30 minutes, slice and enjoy! I love it topped with fresh berries and coconut whipped cream.
