Since it's the middle of winter I thought we could all use a little sunshine in the form of paleo lemon cake (the best kind of sunshine in my opinion)! These little, mini cakes are perfect when you want something sweet but don't necessarily want leftovers. OR, you can always double, triple or quadruple the recipe and make enough for guests! With how cute they are and how YUMMY they taste, they're sure to be a crowd pleaser.

Hi my name is nat and I work out a lot. Saying those words is a little scary in this space. Isn’t that silly? As a certified personal trainer and wellness junkie I shouldn’t we sweating writing those words. But I am. And you know why?
With Crohn’s and colitis awareness week having been last week, my autoimmune disease was on my mind almost 24/7. Getting to connect with so many other IBD warriors and share their stories on my Instagram was so amazing and showed me how bada** dealing with IBD truly makes us.
Unpopular opinion: oatmeal cookies were always the best growing up. Truly – I LOVED oatmeal raisin cookies as a kid (and I’m pretty sure I was the only one LOL). These paleo pomegranate n’oatmeal cookies are the perfect grain-free, gut-healthy upgrade to that childhood favorite.
This year feels like it was the turning point in my life. Every year feels like a chapter has ended and a new one is about to begin, but this year feels like a whole book ended and the sequel is about to begin (leave it to me to use book comparisons).
Wow… happy DECEMBER! Can you believe it!? Seriously November FLEW by. But hey, time flies when you’re having fun. From taking on BGC full-time, starting work with Freedom Bar, fun Thanksgiving festivities with my family, lots of recipe testing (most noteworthy – this paleo gingerbread cookie skillet) and everything in between, I definitely had a lot of fun.
Okay so I know it’s technically Christmastime now (I’m literally listening to Michael Buble Christmas music right this second), but I couldn’t help but sneak in ONE more pumpkin recipe.
What does it mean to truly live well? If you had asked me this question almost three years ago, I would’ve said (probably after giving a big eye roll because duh doesn’t everyone know?) eating “clean” and exercising. A lot.
I’m already so excited for Christmas time that I almost keep forgetting that Thanksgiving is like RIGHT around the corner!!! Who else loves creating the menu for Thanksgiving dinner?
When you think of the holidays what pops into your mind? Family? Friends? Laughter? Food? Bingo! Let’s be real. Holidays are always filled with food and I think that’s one of the best parts! Good food shared with good company is truly the way to my heart. But we all know holiday gut health can be tricky.
