Coffee Coconut Nut Butter Cups

I was going to say chocolate. ;)
Either way, these coconut coffee nut butter cups are the perfect way to indulge in your sweet cravings today AND show your significant other or gal pals some love as well (if you’re willing to share that is).
I’ll be the first to admit that I LOVE my sweets, but I know that eating traditional sweets makes me feel less than ideal and eating refined sugar can be really bad for my ulcerative colitis.
My solution? Continually coming up with new, fun, healthy alternatives to classic favorites like peanut butter cups. Because let’s be real, who doesn’t love a good peanut butter cup!?
These coconut coffee nut butter cups are the perfect, unique alternative to my childhood favorite. They’re healthier and, in my opinion, more sophisticated.
When people first think about eating healthier it can be daunting because their mind goes straight to plain, boring food (dry chicken, steamed broccoli and brown rice anyone???). That’s why one of my FAVORITE parts about my job with Plenty and Well is developing recipes that show others that eating healthy (and eating a healing diet) can be delicious and FUN.
Eating healthy doesn’t have to mean ignoring cravings for sweets and completely flipping your preferred tastes on their head.
I love chocolate, so I’m going to eat chocolate. I’m just going to make sure the chocolatey treats I’m enjoying also nourish my body and gut!
And trust me, these coconut coffee nut butter cups do both of those things.

With a mix of coconut, coffee, creamy nut butter (I personally used sunflower seed butter, but any nut butter would taste delicious!) and decadent dark chocolate, these are the perfect way to show yourself a little love on this Valentine’s Day.

Coffee Coconut Nut Butter Cups
Ingredients
- 2 3oz bars dark chocolate of choice
- 1 Tbsp Coconut Oil
- 1 cup nut or seed butter of choice
- 1 1/2 cup Coconut Flakes
- 3 Tbsp Ground Coffee
- 2 Tbsp Wild Harvest Organic Honey
Instructions
- Prepare muffin tins with paper liners.
- Break your chocolate bars into pieces and place in a small pot and warm on low heat.
- Stir in the coconut oil and keep stirring until the chocolate is completely melted and the coconut oil is mixed in (make sure you don’t let the chocolate burn!)
- Pour about 1 centimeter of chocolate into the bottom of each paper muffin liner. Place in the freezer for about 10 minutes (or until hardened). You will have leftover chocoaolte – save for the top layer.
- While your chocolate is freezing, put your coconut shavings, coffee grounds and honey in a blender or food processor. Blend until a grainy mixture is created.
- Take your chocolate out of the freezer and place a layer of your coconut coffee mixture in each cup.
- Next, add a layer of nut/seed butter. Place in the freezer once again to help these layers set.
- Lastly, pour the remainder of your melted chocolate on top of each cup. Optional – sprinkle more coconut shavings on top. Freeze until hardened.
- Store in the freezer or fridge in an airtight container!
