It definitely is the most wonderful time of the year! Oh how I LOVE the holidays. I love cozying up with peppermint tea by the tree, watching old Christmas movies (Miracle on 34th Street is by far my favorite), wrapping gifts for my family, seeing my town all lit up and sparkly… I honestly wish Christmastime would just last for months on end!!! Maybe that’s what I should ask Santa for this year.  Maybe if I leave out these paleo scones he’ll grant my wish!

But of course, one of the best parts about this magical time of the year is all of the festive baking. My kitchen turns into a tornado during the holidays and I absolutely love it. What makes it even more fun? Blasting Christmas music and having my mom help!! I love that baking (and cooking) has always brought my family together, especially now that I’m home so much less often. And these paleo scones? One of my favorite holiday baking projects yet!

How I bake for the holidays has obviously changed quite drastically throughout the years due to my issues with gut health, and especially now being on SCD, I had to get more creative than ever before. I will forever cherish my childhood full of Russian teacakes, classic sugar cookies in the shape of candy canes and thumbprint cookies from my nana, but I’m also so, so grateful that I’ve found what works for my stomach and that I can still enjoy yummy treats today that make me feel GOOD and that aren’t hurting my gut.

I think that’s something that can be most difficult when you find out that you have food intolerances (or allergies) or have other serious gut health issues like Crohn’s Disease. It’s difficult to have to alter traditions, and it can be especially hard if the people around you aren’t totally receptive to that idea. Personally, I think traditions are great and definitely something to be held close to your heart, but I also think it’s okay to switch them up and have them transform and flourish in new ways. So yes, many of the food-related traditions have changed in my family since figuring out how I best have to fuel my body (and I’m so thankful that they are so supportive and willing to go along for the ride), but it’s been fun establishing new traditions. 

I can’t wait to keep sharing paleo and SCD-friendly holiday treats with you guys, because I believe everyone deserves to having tasty, festive treats around the house during the holidays. Just because you may have to take precautions to ensure your health, doesn’t mean you can’t indulge a little.

Paleo Lemon Pomegranate Scones

Paleo Lemon Pomegranate Scones

Ingredients

  • 3/4 cup almond flour
  • 3/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut oil
  • 1 tsp pure vanilla extract
  • 3 eggs
  • 2 1/2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 3 Tbsp honey
  • 1/3 cup pomegranate seeds

Instructions

  1. 1. Preheat your oven to 350 degrees F and prepare a baking sheet by "greasing" it with coconut oil or laying down a sheet of parchment paper.
  2. 2. In a large bowl, mix the almond flour, coconut flour, baking soda and salt together.
  3. 3. In a separate bowl, whisk the three eggs. Add the vanilla extract, melted coconut oil, lemon juice, lemon zest and honey and stir well.
  4. 4. Mix the dry ingredients into the wet ingredients and fold in the pomegranate seeds.
  5. 5. Roll out the dough (or just use your hands) and form a circle about 3/4 of an inch-one inch thick. Cut into 8 scones and bake for 18-20 minutes.
